Japanese Sticky Rice

Makes approximately 4 rolls.

Ingredients:

2 cups raw rice (short or med grain)
2 cups + 2 Tbs. water
4 Tbs. rice vinegar
2 Tbs. + 1 tsp. sugar
1 tsp. salt

Directions:

Add water to raw rice. Cook. Mix the rice vinegar, sugar and salt, heating the mixture & stirring until the sugar dissolves. Quickly add the seasoned rice vinegar solution to cooked rice after cooling 10 minutes. Mix with cutting and folding motion.
